When I’m craving chocolate, I like to bake brownies. Their fudgy texture and chocolatey taste always hit the spot and satisfy my desire for chocolate.

Sometimes, however, my friends, family, and I aren’t able to eat all of the brownies I make, and some are leftover. In addition to this, there are also times when some brownies break and no one really wants them.

In these situations, I like to save these leftover and broken brownies to use later and make other delicious desserts.

10 Creative Things To Do With Leftover & Broken Brownies

The best thing to do with leftover and broken brownies is to make brownie truffles. Break down the rest of your brownies into crumbs. Add a few drops of water and clump your brownie crumbs into small-sized balls. Leave them in the fridge for 30 minutes and enjoy your brownie truffles.

Below are some of my favorite things to do with these leftover or broken brownies:

Make brownie truffles

Generally speaking, one creative thing you can do with leftover and broken brownies is make truffles. To do so, you just need to form your brownies into little truffle-sized balls and let them chill for about 30 minutes in the fridge.

Brownie truffles are easy to make and can be a fun way to get kids involved as well.

To make brownie truffles, I like to mash my leftover brownies with cream cheese or frosting until they’re turned into malleable dough.

I then form the dough into balls using a small cookie scoop. If I want to add mix-ins, then I will add them to my dough before forming it into balls.

Common mix-ins that I like to use are chopped walnuts or almonds. You can also add in various candy pieces like M&Ms or chocolate chips.

I also like to occasionally coat my brownie truffles by rolling them into cocoa powder or melted chocolate.

After I’ve formed my brownie truffles, I then let them chill in the fridge for at least 30 minutes so that they can set.

Make brownie pops

Generally speaking, making brownie pops is a simple way you can use leftover or broken brownies. The process is similar to making brownie truffles with only one extra step: dipping a lollipop stick about halfway into the brownie ball.

I like to make brownie pops rather than truffles whenever I’m hosting a get-together with this treat as a dessert option. I prefer making brownie pops instead of just truffles whenever I’m preparing treats for an event because of their convenience.

Since brownie pops are on a stick, they are easier to eat, and guests can move around freely while enjoying them.

Make a brownie crust

Generally speaking, if you have dry leftover or broken brownies, then you can use them to make a delicious pie crust. To do so, you can simply substitute your brownies for the graham crackers in your favorite graham cracker crust recipe.

Whenever I have dry leftover or broken brownies, I like to use them to make a pie crust for one of my favorite desserts: cheesecake.

Making a pie crust with brownies is easy, especially if the leftover brownies are dry. All I do is chop up the brownie pieces in my food processor and add a bit of melted butter and sugar just like I would when making a graham cracker pie crust.

I also like to add in a tiny bit of cinnamon as I find that it really compliments the chocolate flavor of the brownies and adds a little something special to the final taste of my brownie crust.

Use as toppings

Generally speaking, a very simple way that you can use leftover and broken brownies is by using them as a topping for other desserts. Doing this takes little time and effort, and it can take a treat that’s good and make it great.

You can use leftover or broken brownie pieces as a topping on things like cakes, ice cream, and yogurt.

For more of the brownie taste and texture, I like to use bigger pieces, but when I only want a hint of brownie in my dessert, I then like to finely chop my leftover or broken brownies using my food processor or a knife.

Make parfaits

Generally speaking, you can use leftover and broken brownie pieces to make parfaits. These parfaits can be a great treat for lunch or a nice dessert after dinner. Place the leftover brownie crumbs into the bottom of a glass with any additions of your favorite parfait ingredients.

To make parfaits with my leftover or broken brownie pieces, I first place a piece of my brownies in the bottom of a shot glass then follow that up with either yogurt, pudding, whipped cream, or mousse.

After that, I then may choose to add toppings like berries or nuts, and I keep layering my parfait in this way until I reach the top of the glass.

Make a trifle

Generally speaking, one way that you can use leftover and broken brownies if you have a lot of them is by making a trifle. Making a brownie trifle is simple and the end result is quite delicious.

Trifles are often made with cake, but just like with parfaits, you can use brownies to make trifles as well.

The process to make a trifle with brownies is the same as when making parfaits.

However, since trifles are larger, this is a great option for you to do only if you have a lot of leftover brownies because otherwise, you run the risk of running out of brownies to layer your trifle with.

Make brownie bites

Generally speaking, you can make brownie bites with leftover or broken brownies for a delicious deep-fried treat. This is one of the more complex things you can do with leftover brownies since it involves deep frying, but the end result, while more unhealthy, is also just as dangerously delicious.

To make my deep-fried brownie bites, I first make brownie dough, like I would when making brownie truffles or cake pops, except this time I also mix in chocolate chips.

If I want to get fancy, I may do a mix of different types of chocolate chips: white, semi-sweet, dark, etc.

Once the dough is formed, like when making truffles or cake pops, I then form the dough into multiple balls. These balls can be a little bigger than when making truffles or cake pops, so I sometimes use a medium-sized cookie scoop instead of a small one,

Another thing I do differently when making brownie balls instead of truffle or cake pops is freeze the balls for at least 30 minutes rather than just refrigerating them.

I do this so that they can hold up better when I deep fry them.

While my brownie balls are in the freezer, I make a batter with flour, sugar, baking powder, and an egg that I can dip my balls into so that they will fry well. I sometimes also just use pancake mix as my batter. In these instances, I just use one of those “complete” mixes that just need water,

Once my grease is hot and my brownie balls are coated with the batter for frying, I deep fry the balls until they are golden brown.

Make a tiramisu

Generally speaking, you can use leftover and broken brownies to make a tiramisu. You can use dry brownie pieces in place of ladyfingers in your favorite tiramisu recipe. You can also crush the brownies into crumbs and create a nice brownie base for your tiramisu.

I love tiramisu, especially when it’s homemade as I get to control how much espresso is in it.

You can also make sure to shape the leftover or broken brownies in the shape of ladyfingers to use around your tiramisu cake.

While tiramisu is usually made with ladyfingers, I actually prefer to use leftover brownies as I love the way the chocolate from the brownies interacts with the espresso in this dessert to create such a wonderful taste.

Generally speaking, you can blend leftover and broken brownie pieces into milkshakes for a yummy upgrade to your regular shake. Brownies will give milkshakes a thick chocolaty flavor which will go well with any dairy ingredients in the milkshake.

Blending leftover and broken brownies into milkshakes is a quick and easy way to use them, and you get an insanely yummy treat out of it.

I love the texture of the brownies when they are blended into milkshakes, and it’s always the best when you get the chunk of unblended brownies in your shake because it’s always so fudgy and delicious even if the brownies you used were originally dry and lacked moisture.

Generally speaking, you can make a sundae using leftover and broken brownies. To do so, you just need to put some brownie into a bowl and top it with your choice of ice cream and toppings.

How can I moisten leftover dry brownies?

Generally speaking, one of the best ways to moisten leftover dry brownies is by briefly warming them in the microwave. Place a damp paper towel on top of the dry brownies and put them in the microwave for 10 to 15 seconds. The moisture from the paper towel will transfer onto the brownies.

Whenever I need to moisten a dry baked good, whether it’s a brownie, a slice of cake, or a muffin, I like to microwave it for a little while until it’s soft again.

This method won’t fix a brownie that’s burnt, but if the issue that’s responsible for your dry brownie is just that it’s a bit old and has gone stale, then this method works well.

How long you will need to microwave your leftover dry brownies depends on their size and your microwave, but I’ve found that it rarely takes more than about 10 to 15 seconds.
